Avocado on Toast with Dukkah, Garlicky Spinach Tomatoes and a Poached Egg:
Serves: 1
Toast Avocado Dukkah...
- Toast 2 slices of good quality bread.
- Spread 1/2 an Avocado on Toast.
- Sprinkle a generous amount of Dukkah* over the Avocado Toast.
Garlicky Spinach Tomatoes...
- In a fry pan heat 1 tbs of neutral oil. (I used Canola)
- Add 1/4 diced onion and cook until translucent.
- Chop 1/2 garlic clove and 4-6 Cherry Tomatoes and add to pan.
- Stir in a big handful of Spinach and cook until wilted.
Poached Egg...
- In a small saucepan bring water to the boil.
- Once boiled start stir the water with a spoon to create a circle monition.
- Crack in 1 egg while the boiling water is circling.
- Cooked egg until your desired way to eat it.
