Raw Caramel Slice


Raw Caramel Slice:

Base:
  • 1/2 cup Mejool Dates
  • 1 1/2 cups Almonds
  • 1 tbs Maple Syrup
  • 1 tbs Coconut Oil
  • 1 tsp Vanilla Essence
Process all ingredients until a fine crumb.
Press into a lined rectangular baking try.
Freeze for 10min.

Caramel:
  • 2 cups Mejool Dates
  • 1/4 cup Tahini 
  • 2 tbs Coconut Oil
  • 1 tsp Vanilla Essence
  • 2 tbs Maple Syrup
  • Pinch of salt
  • 1/3 Water or more if you need it.
Process all ingredients until thick.
Spread evenly over base.
Refrigerate for 10mins.

Chocolate:
  • 1/4 cup Cacao 
  • 1/4 cup Maple Syrup
  • 2 tbs Coconut Oil, melted.
Combine all ingredients and pour over base and caramel.
Refrigerate for 10mins.

Honey Almond Beans


Honey Almond Beans:

Serves 1:

  • handful green beans with ends cut off
  • 1/4 lemon
  • 2 tbs slithered almonds
  • 1 tsp honey
  • 1 tsp extra virgin olive oil
  • salt and pepper to taste
Cook beans in boiling water.
Drain water and add the rest of the ingredients.

Banana Pear Smoothie


Banana Pear Smoothie:

  • 1 banana
  • 1 pear
  • 3/4 of milk of your choice (I used soy)
  • 1/4 tsp cinnamon 
  • 1/4 tsp nutmeg
  • 1 tsp LSA (linseeds,sunflower seeds, almonds)
Blend all ingredients until thick and creamy.

Coconut Chocolate Almond Butter


Coconut Chocolate Almond Butter:

  • 1 cup almonds
  • 1 heaped tbs cacao powder
  • 2 tbs agave syrup
  • 1 tbs coconut oil
Process all ingredients until it forms a paste.

Chicken Pad Thai


Chicken Pad Thai:

Serves 1.

Ingredients:

  • 4-6 small mushrooms
  • 1/2 onion
  • 1/2 free range chicken breast, diced
  • 6 broccoli florets  
  • handful soba noodles
Sauce:

  • 1 tbs tahini 
  • 1/4 tsp ginger
  • 1/2 tsp garlic
  • 1 tsp sesame oil
  • 1tbs soy sauce
  • 1/4 lemon 

In a pan lightly fry in neutral oil (canola oil) mushrooms and onion.
Once softened add diced chicken breast and cook.
Meanwhile cook broccoli and soba noodles in boiling water, drain and add to the pan. 
Stir in sauce and cook for a further 2- 3 min.

Choc Berry Overnight Oats


Choc Berry Overnight Oats:
  • 1 1/2 tbs goji berries
  • 1/3 cups oats
  • 1 tsp cacao powder
  • 1 tbs chia seeds
  • 1/2 cup milk
  • 1 banana, mashed
  • 1 tbs peanut butter
Combine all ingredients and refrigerate overnight.

Honey Cinnamon Banana Overnight Oats


Honey Cinnamon Banana Overnight Oats:

  • 1 banana, mashed
  • 1/3 cup oats
  • 1/2 tsp cinnamon 
  • 1 tsp honey
  • 1/3 milk
  • 2 tbs soy yoghurt
  • 1 tbs chia seeds
Toppings:
  • 1 tbs ABC spread (almond, brazil and Cashew)

Combine all ingredients and refrigerate overnight.

Maple Almond Coconut Bliss Balls


Maple Almond Coconut Bliss Balls

  • 1 cup almonds
  • 1/2 cup coconut flakes
  • 1/4 cup maple syrup.
  • 1/2 cup chia seeds
Process ingredients until they come together into a ball. (like cookie dough).
Roll dough into 6 even balls.
Coat balls in chia seeds.
Refrigerate until firm.

Cranberry and Pistachio Overnight Oats


Cranberry and Pistachio Overnight Oats:

  • 1/2 cup oats
  • 1 tbs chia seeds
  • 1 tsp honey
  • 1/3 milk
  • 1 1/2 tbs cranberries
  • 1 1/2 tbs pistachios
Combine all ingredients and refrigerate overnight.

Blueberry Overnight Oats



Blueberry Overnight Oats:
  • 1/3 cup oats
  • 1/3 cup milk (I used soy)
  • 2 tbs soy yoghurt
  • 2 tbs chia seeds
  • 1 tbs honey
  • 1/3 blueberries
Combine all ingredients and let to set overnight.

Toppings:
  • 1 tbs ABC spread (almond, brazil and cashew nuts)
  • small handful coconuts flakes.
Top with toppings:

Best Burger Ever!


Best Burger Ever!:

Caramelized Onion and Mushrooms:

  • 1/4 Onion
  • 2 Mushrooms, sliced
  • Salt and Pepper
Cook onion and mushrooms very slowly in a small amount of oil until caramelized. (golden brown)  

Beef Pattie:

  • 1 cup Mince Beef
  • 1/2 tsp Digon Mustard
  • 1/2 tsp Vegemite (Australian Yeast Spread you can use Marmite or 1/2 a Beef Cube) 
  • 1 tsp Tomato Paste
  • 1 tbs Dried Mixed Herbs
  • Salt and Pepper 
Combine all ingredients and roll into a ball
Add pattie to a heated and greased pan. (slightly flatten pattie).
Cook pattie 5 mins each side. 

Avocado and Pesto Spread:
Combine ingredients until they form a spread.

Condiments:
  • 2 slices of Bread, toasted
  • Sliced Cucumber
  • handful Spinach
  • Cheese
Assemble your burger any way you like it.

Honey Roasted Peanut Butter


Honey Roasted Peanut Butter:

  • 375g Raw Peanuts
  • 1/3 cup Organic Honey
Roast peanuts on a tray until they start to realise their oils and go golden.
Process peanuts and honey until the forms a paste.

Honey Cinnamon Oats


Honey Cinnamon Oats:

  • 3/4 Oats
  • 1 cup Milk
  • 1/2 tsp Cinnamon
  • 1 tbs Honey
Toppings:
  • 1 Banana
  • Handful Coconut Flakes
  • 1 tbs ABC Spread
Cook oats in milk.
Stir in cinnamon and honey.
Top with sliced banana, coconut flakes and drizzled ABC spread.

Vanilla Chia Pudding


Vanilla Chia Pudding:

  • 3 tbs Chia Seeds
  • 1 cup Soy Milk
  • 1 tbs Vanilla Extract 
  • 1-2 tbs Agave Syrup
  • 1/2 cup of Muesli of your choice
Combine chia seeds, milk, vanilla and syrup and refrigerate overnight.
Top with your favourite muesli.

Broccoli and Basil Pesto with Zucchini and Carrot Ribbons


Broccoli and Basil Pesto with Zucchini and Carrot Ribbons:


  • 2 tbs of Broccoli and Basil Pesto
  • 1 tsp parmesan Cheese (optional)
  • 1/2 vegetable cube
  • 2-3 tbs Water
  • 1 Zucchini
  • 1 baby Carrot
  • 1 tbs Pine Nuts
In a pan add broccoli and basil pesto, parmesan cheese, vegetable cube and water until cooked through.
Ribbon zucchini and carrot so they resemble pasta.
Add ribbons to pan and cook until combined.
Sprinkle with pine nuts.

  • 1 Raw Broccoli head
  • Handful Basil leaves
  • 1/2 cup toasted Pine Nuts
  • 1/2- 3/4 cup Olive Oil
  • 1/4 Lemon Juice
  • Salt and Pepper to taste
Process all ingredients together until a paste.

Caramelized Banana and Peanut Butter on Toast


Caramelized Banana and Peanut Butter on Toast:

  • 1 Banana
  • 1 tbs Coconut Oil
  • 1 slice of Wholemeal Bread
  • 1 tbs natural Peanut Butter
  • small handful Coconut Flakes
  • Maple Syrup 
In a pan heat coconut oil until melted.
Add sliced banana to pan and cook until caramelized. 
Meanwhile toast bread until golden brown and spread with Peanut Butter.
Top toast with banana.
Sprinkle with coconut flakes and drizzle with maple syrup.

Coconut Banana and Date Smoothie:

  • 1/2 cup Coconut Milk
  • 1 Banana
  • 2-3 Dates
  • a pinch of Cinnamon 
  • 1 tbs Agave Syrup (optional)
Blend ingredients until smooth.

Açai Bowl


Açai Bowl:

  • 1 tbs Açai Powder
  • 1/2 cup Blueberries
  • 1/2 cup Strawberries
  • 1/2 cup Blackberries
  • 1/2 cup Raspberries
  • 1 tsp Swisse Vitality Superfood Powder
  • 1 tbs Honey 
  • Water to blend
Toppings:
  • 2 dates
  • small handful of Coconut Flakes
  • Drizzle of Chia and Almond Spread
Blend all ingredients until smooth.
Top with Toppings.
