Makes: 8
Date Spiced Muffins:
- 1 cup buckwheat four. (I grounded my own using a processor)
- 1/2 cup LSA
- 3/4 to 1 cup fresh dates, pitted
- 1 tbs coconut sugar
- 1/4 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp bi-carb soda
- 1 chia egg (1 tbs chia seeds soaked in 3 tbs water for 2min)
- 1/2 cup + 2 tbs soy milk (my vary depending on how fine your buckwheat flour is)
- 1/3 cup honey
- 1/4 cup sunflower oil or coconut oil, melted
Preheat oven to 180°C.
Combine all ingredients making sure it is mixed well.
Fill 8 lined Muffin moulds with mixture.
Cook for 15 to 20mins until golden brown.
